This whole grain banana cake is an absolute success. It is full of fibers that help us feeling “full” and promote bowel function. It also contains many vitamins and minerals, and of course… a great flavor! Would you like to try? I bet you won’t regret.

Ingredients (cake):

• 1 cup of organic wholemeal flour;
• 
1/2 cup of almond flour;
• 
2 cups of oatmeal;
• 
1/2 cup of natural sweetener (or brown sugar);
• 
1/2 cup of sultanas;
• 
1/2 cup of linseeds;
• 
1 tbsp of ground cinnamon;
• 
3 mashed bananas (ripe bananas);
• 
3 eggs;
• 
1/3 cup of coconut oil;
• 
1 cup of milk (cow’s or veggie milk);
• 
1 tbsp of baking powder;

Ingredients (topping):

• 1 apple cut into fine slices;
• 
Chia seeds, dark chocolate chips and pumpkin seeds (to taste).

How to Prepare:

• Mix the bananas, milk, eggs and coconut oil in a large bowl;
• 
Gradually add the rest of the ingredients, except the baking powder, and stir well;
• 
Finally, add the baking powder, and stir a bit more;
• 
Put the cake batter into a non-stick greased form, and accommodate all the topping ingredients according to your creativity :)
• 
Bake it in a regular oven at 180c (350F/Gas 4), on the centre shelf of the oven, for approximately 30-40 minutes;
